Easy “No Measuring” Quinoa Salad
Ingredients
Quinoa
Olive oil
Balsamic vinegar
Tomatoes
Raw cauliflower
Radishes
Mint
parsley
Baby spinach leaves
Wilted kale
Red pepper
A sprinkle of chili flakes
Little sea salt
NOTE
Extra protein may be added, for example:
Boiled egg
Chicken
Ham
Left over cooked meats
Instructions:
1. Cook quinoa according to instructions on the packet. Chop the tomatoes & slice the radishes.
2. Mix all the ingredients, add optional protein and serve!
